Oatmeal Cookies

 This is the ultimate health cookie and total crowd pleaser. I was making them vegan but couldn’t get the cookies to stay together after they cooled so I went back to a traditional recipe. I like to add chopped walnuts when they’re in the budget but these cookies are delicious by themselves, or with a glass of almond milk, peppermint tea, cafe au lait or an oatmeal stout (they kinda go together if you know what I mean). Here’s the goods:

Preheat oven to 350 degrees.

 Place 3 cups of whole oats (organic) in a large bowl

Sift in and stir:

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon of cinnamon

Then add:

 1 1/2 cups raisins ( I soak them overnight in a fruit juice, apple or pineapple, then strain them so they’re plump and tasty)

 

 

Cream wet ingredients (calm down now!)

 1 cup unsalted organic butter, softened
2/3 cup of honey
2 large eggs
2 teaspoons vanilla

 

 

Then add wet ingredients to dry ingredients. Don’t over stir.

 Take about a tablespoon full of dough and drop it on a greased cookie sheet about 2 inches apart. Bake for about 11 to 15 minutes or until slightly brown on the bottom. Pull the out of the oven let them rest for a moment and then put them on a cooling rack.
